I've been a terrible, horrible, bad, no good food blogger. Much has taken place in my life over the past year and I have either not had time to come up with and try new recipes or I simply have not had to the time to document my successes (and failures.) And truthfully, there have been those times when going into the kitchen has seemed both daunting and overwhelming and yet, while I'm there at the counter or stove, I'm truly happy. I vow to get back into the kitchen with more regularity and to share with you all that makes our stomachs and hearts smile!

Cheers!

Apple Pie Muffins

Pardon my lack of photo but the muffins disappeared before I could get a picture!

2 eggs
1/3 cup of canola oil
1/2 - 3/4 cup of sugar
1 tsp vanilla
1 tsp baking powder
1/2 - 1 tsp cinnamon, optional
2 cups unbleached flour
1 1/2 cups of apple pie filling
3/4 cup of raisins or cranberries

Preheat oven to 375

In the bowl of a large mixer add eggs, canola oil and sugar and beat well. Add in the vanilla, the baking powder and cinnamon*. Slowly add flour to the mixture, one cup at a time. When well blended add the apple pie mixture until well blended. Lastly, toss in cranberries or raisins.

Using a small ice cream scoop, scoop out batter in to muffin tin. Bake 20 - 25 minutes.

Makes 12

* Some pie filling brands contain cinnamon and others do not.
Comstock and Lucky Leaf are readily available in your grocery store in the baking aisle.
