I love the combination of cooked apples and apricots in muffins. There is almost enough fruit in these mini muffins to count as a serving! I will be bringing these to Alexander's preschool play date/orientation tomorrow. These bite sized treats should be a big hit!
2 Cups unbleached flour
1 1/2 Cups sugar
2 lg. eggs
3/4 Cup canola oil
2 tsp. vanilla extract
1 tsp. baking soda
5 small apricot peeled, pitted and cut into small pieces
1 Cup spiced apple chunks or chunky applesauce
Preheat oven to 350 degrees
Combine eggs and sugar, mix well
Add vanilla, baking soda, mix well
Add oil and flour, mix well
Fold in apricots and apples
Cook for approximately 25 minutes, until golden brown
Let cool for 20 minutes before serving
Makes 24 nicely sized mini muffins
