Saffron Rice with Carmelized Onions

Incredibly easy. Incredibly tasty!
1 large onion
Saffron, 1 - 2 pinches
olive oil
sea salt
Cook rice per package to serve 6.
In boiling water, just prior to adding rice, add saffron -- a healthy pinch or two.
While rice is cooking finely chop 1 onion (I like red)
In nonstick saute pan add 1 - 2 tbs olive oil, when hot add onions and cook until golden brown.
Remove from heat when done.
When rice is nearly done add onions, stir well, and finish cooking rice. Keep covered until ready to serve. (Add salt if necessary)
