A Most Versatile and Delicious Sauce
Even after last week's chicken, even after my Most Delicious Sandwich I still had some leftover Cilantro Garlic sauce (recipe below). I came home from Rebecca's skating practice and needed to whip something together for dinner very quickly. Pasta came to mind and so I tossed some water on to the stove and searched for ingredients. I found a box of elbow pasta, then grabbed the jar of cilantro garlic sauce, some crumbled feta, some leftover broccoli florets, and tossed it all together. Oh wow, what a great pasta sauce that made! Next time I will add some chick peas, black or Kalamata olives and grape tomatoes. Hmmm, I wonder what other uses I can find for this most versatile and delicious sauce!

Cilantro (or parsley) Garlic Sauce



I made this sauce and served it with Jasmine rice, chicken and peas last night. It was intense -- rich lemon and garlic flavors and just enough cilantro to taste. Rave reviews by everyone! If cilantro is not your thing you could easily substitute parsley.
Ingredients:
1 medium garlic, cloves peeled
1/2 tsp. Sea salt
1/2 cup cilantro (fresh)
1/2 cup extra virgin olive oil
Juice of one lemon
1/8 tsp. cayenne pepper
In a mini-prep food processor (an absolute must have) blend all ingredients until well blended. Pour into a pitcher and serve with grilled chicken, steak or shrimp!
